Quinoa Winter Salad with Cabbage, Apple & Almonds

While researching for this blog I come across loads of information about health and our current deadly western diet.  Unfortunately our American diet is being spread around the world, slowly but surely.  Driving past a McDonald's the other day I saw 3 obese spanish kids walking in.  Fifteen years ago when I first came to Spain there were only 2 McDonald's in all of Spain, Madrid and Barcelona.  With just about as many obese people.  Today, there are many more obese people and many more fast food restaurants here in Spain.  Coincidence, I think not.  There is a superstore chain here as well called Carrefour, second in the world only to Walmart.  Every time I shop there I like to check out what the people around me are buying.  And more and more they are purchasing the shit we Americans have been purchasing and eating now for decades.  They buy it because of the marketing geniuses that know exactly how to make this poison look edible.  They know who to bribe elected officials legally (I think this is called lobbying) so that their foods won't be regulated just like in the states.  Just put an E followed by some numbers and we will call it good.  "If the consumers want to they can look it up".  Which of coarse we don't.  They want to keep us numb an dumb.  If it's quick and easy perfecto!  Just as long as it fills me up, I'm good.  And the problem is that because it does not make us sick right away it must be okay.  These terrible foods take years  for their deadly signs to appear in the form of cancer, heart disease and diabetes.  And after years and years of consuming these un-nutritious, poisonous foods we say to ourselves why me?  How did this happen?  Now what do I do?  So you go to the doctors and they tell you that you need to start taking this pill and that pill.  And you will need to take this pill for that pill.  And those pills you will need to take the rest of your life.  And now you have fallen into the Pharmaceutical trap.  And believe me, they want you in that trap.  That is how they are one of the most profitable industry in the world. The sicker our society is the richer they get.   However,  if you are lucky, your doctor might tell you to change your diet and exercise.  And if you are really, really lucky they will tell you what to eat and what not to eat and what exercises to do.
The word is starting to spread more and more with the help of the internet.  Books are coming out like "The Omnivore's Dilemma"and "Fast Food Nation"or "The China Study"and "Anticancer, A New Way Of Life".  Movies are coming out on the subject as well. Two great movies on the subject are "The Beautiful Truth" and "Forks Over Knives".  If you are willing to hear this other side of this story then you mostly likely will agree that there is a problem with our general health as a society.  You need to make that decision for yourself.  Do I buy that frozen low fat pizza and diet Coke so I can watch my favorite TV show or do I buy the ingredients for this Quinoa Winter Salad and spend an hour cooking for me and my family and miss the show.  It's your choice.  Pay now or pay later.







Quinoa Winter Salad with Cabbage, Apple & Almonds

Quinoa is a complete protein. Making it a great animal protein substitute. It's a good source of dietary fiber as well as vitamins and minerals. Combined with all of these raw vegetables and your body can't help but feel good!
Ingredients (Serves 4)
    Quinoa
    • 1 quart water
    • 1 cup quinoa
    • 1 cinnamon stick
    • 1 bay leaf
    • 1 tsp salt
    Salad
    • 1 cup shredded cabbage
    • 1/2 cup broccoli florets
    • 2 carrots grated
    • 1 apple peeled and diced
    • 1/4 sweet onion diced
    • 1 small precooked beetroot diced
    • 1/2 cup almonds chopped
    Vinaigrette
    • 2 tbsp fresh lemon juice
    • 2 tbsp fresh orange/tangerine juice
    • 2 tbsp apple vinegar
    • 1/2 cup extra virgin olive oil
    • zest of 1 orange/tangerine
    • 1 inch fresh ginger grated
    • 1 tbsp turmeric
    • 1 tsp cinnamon
    • salt and freshly ground black pepper
    Instructions
      Quinoa
      • Purchase quinoa that has had the saponin coating removed. Then all you have to do is rinse it.
      • Next put all the ingredients in a large pot over medium high heat until it starts to boil then reduce heat so that a nice gentle simmer occurs.
      • Cook for about 15 mins. Strain and rinse in cold water and let drain.
      Salad
      • Mix vegetables with the quinoa.
      Vinaigrette
      • Put all ingredients in a large glass jar with a lid and close tight.
      • Then shake vigorously for 1 minute.
      • Pour over salad and mix well.
      • Serve with slices of orange and shredded cabbage.
